The Chef
In the kitchen, the approach is instinctive and respectful. Each plate reflects the flavors of the seasons, the tides, and precise techniques. Ingredients are chosen for their freshness, origin, and authenticity. Here, the chef combines the sea and the land in straightforward cuisine, driven by a desire to welcome guests.
The sommelier
Passionate and knowledgeable, our sommelier Cédric Maupoint shares a simple vision: that of a wine that accompanies, tells a story, and awakens the senses. On the wine list, big names rub shoulders with lesser-known gems, chosen for their perfect pairing. Mineral whites, full-bodied reds, or summer rosés: each bottle finds its place in a moment, an encounter, an emotion at the table.
After a busy 20-year career, Cédric decided to return to his roots. His prestigious experiences at the Four Seasons Hotel George V, the Shangri-La Paris, and the Prince de Galles, among others, have in no way diminished his simplicity and good nature. He has a refined palate and loves to share his passion and introduce his guests to his discoveries, from fine wines to products from small, excellent winemakers.
